Jolene's Recipe

In keeping with the spirit of Night Sky, and where she grew up in Alaska, I'll tell you my favorite way to have salmon.

You can do this with "salmon steaks" or just the fillet. And I ALWAYS cook salmon over fire.

You can leave the skin on with this one - it usually sticks to the grill so the skin stays behind when you pull off the fish, and protects the meat while cooking. (and this recipe works with halibut as well).

Equal parts soy sauce, toasted sesame oil and maple syrup (usually about 1/3 cup of each for two fillets). Coat the fish well and let it sit for 30 minutes to an hour. Fish really soaks up flavors fast, so don't soak it all day. Just before setting it skin side down (or on aluminum foil) on the grill, spread a fine layer of garlic and ginger powder over the top. I usually put a pinch in my palm and rub my palms together over the fish for a very light coating.

Usually 10 minutes on the grill is enough. Almost everyone over-cooks fish. It should flake apart, but still look moist inside.

The rice:

I use jasmine rice for this.

Always rinse your rice well, then ignore the directions on how to cool the rice, and do this instead ;-D

One part rice, to two parts water - on other words 1 cup of rice for 2 cups of water.

A few tablespoons of toasted sesame oil.

Put it all in the pot together, and stir on the stove until boiling.

Put the lid on, turn to LOW, and set the timer for 6 minutes.

At the 6 minute mark, slide in chopped garlic, green onions, and salt and pepper to taste. Do it quickly, stir and replace the lid.

Set timer for 5 more minutes, and then take the rice off the heat, to let it sit until the rest of the meal is served.

I either sautee asparagus in butter (I know, I know, not the healthiest way to eat it) or steam an artichoke.

And then when your salmon, rice, and veggie is all on your plate, give it all a little squirt of lemon juice - or douse it in soy . . . whatever your preference might be.

I serve this to my friends who don't like fish - and most of them love it.

Night Sky
